Choc Mud cake

Here is the recipe I promised you earlier.... Hope you try it one day as it is very easy to make and eat.....
Ingredients
250 g butter
2 cups brown sugar, packed
1cup water
1/3 cup whisky or dark rum
150g chopped quality dark chocolate
2 cups Plain flour
1 teaspoon baking powder
1/4 cup cocoa
2 large eggs, beaten
Method
1.Bring butter, sugar, water and whisky to the boil in a regular saucepan or microwave oven. Remove from heat add the chocolate, stir well to melt.
cool at room temp.
2. Add eggs, mix well. Sift in dry ingredients, beat well.
3. pour into greased and lined 20cm tin. Bake at 160c for 50-80 minutes or until a skewer inserted into the cake comes out clean.
4. Leave cake to cool in the tin. Serve dusted with icing sugar
There is the recipe I use well I do change a few things here and there like the whisky won't find any of that in my house so this time I added creme de menthe as that is what was in the cupboard. If I had any Bailey's I would have put that in... and on the top I had a chocolate sauce I made with choc, cream and butter then on top of that I put cream(slipped with the icing sugar) with flakes of choc....
Choc ganache (recipe for the icing)Ingredients
250g dark cooking chocolate, chopped
1/3 cup cream
Method
Combine chocolate and cream in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until smooth. Remove bowl from heat.
Set aside at room temperature to cool, stirring occasionally, until ganache is thick and spreadable.

mmmmm it was yummy I tasted it last night, I was going to go up today for coffee and some more cake if there was any left, but as usual there weren't enough hours in the day.
